Baking Academy of Ireland Recipe: Meringues

The ideal dessert and easy to make - Derek O'Brien, Master Baker.

You will need to following equipment:

Bowl; Electric Whisk; Weighing Scales; Jug; Spatula; Baking Tray; Baking Parchment;

Ingredients:

Egg White: 120gr
Caster Sugar: 125gr
Icing Sugar: 125gr

VERY IMPORTANT: It is essential that the mixing bowl and whisk is grease / fat free. To achieve this wash both in boiling water.

Method:

  1. Place in mixing bowl and whisk until stiff peaks form.
  2. Mix to two types of sugar together.
  3. Add 200gr to the whipped egg white and whisk again until the mixture thickens.
  4. Using a spatula fold the remainder of the sugar into the mixture.

Preparation Instructions:

  1. Make up the meringue as described above.
  2. Pipe or spoon the mixture onto baking parchment covered baking tray.

Bake:

Place in the oven at 130°C and bake for 35 to 60 minutes – depending on size.

Finishing:

When the meringues are cool place them on a serving plate and decorate with whipped fresh cream and strawberries.
