1. Certificate in Baking – Introductory Level.
Students attending this four day course will learn the fundamentals of baking which will give them the skills and knowledge to become a confident baker. This course covers basic yeast and soda breads, a variety of cakes including small cakes & scones and a range of sweet pastry pies, tarts and tray bakes.
2. Certificate in Baking – Intermediate Level.
During this four day course the student will be introduced to the craft and technology of baking at an intermediate level. This course covers continental flat and sweet breads, savoury pastries, sweet paste desserts and afternoon biscuits & cookies.
3. Certificate in Baking – Advanced Level
This advanced level four day baking course completes our suite of certificates. This final element covers continental bread baking, patisserie, decorated gateaux and French macaroons.
4. Certificate in Professional Baking
Students who have attended all three certificates will be eligible to apply for the award of the Certificate in Professional Baking

PICK & MIX: Specifically for those who cannot attend the four full days of these Certificate courses but who would like to obtain the qualification we are offering a solution. Attend one, two or even three days of a particular Certificate Course (in any order) at the special fee (see below). The day(s) you attend will be recorded and credited allowing you to attend the other day(s) at a later stage and at a time of your choice.
These certificate courses are designed to meet the skills needs of aspiring bakers – including both the enthusiastic amateur and the professional baker seeking upskilling. The programme will provide the participant with a level of knowledge, skill and understanding that will enable them to become confident bakers and even help them to build a successful career in today’s rapidly changing hospitality industry. NOTE: In order to facilitate those with limited time available these courses may be taken in any particular order as they are all aimed at the non-professional baker (e.g starting with the INTRODUCTORY CERTIFICATE is not a requirement). However, in order to qualify for the Professional Certificate, students must have attended all 3 certificate courses.
