 Rustic Bread - Intermediate Level Course

Rustic Bread for Bread Lovers - Enjoy the experiencs of kneading and stretching dough and baking perfect bread. Baking your own bread is a very enjoyable experience - it is also more gratifying than bought factory bread. This course is for the person who has some baking experience but wishes to improve their skills while, at the same time, learning how to make a wider range of interesting and healthy breads. This course is offered in two modules - the course fee for each module is €80.

Module A:  This module is a 4 hour practical hands-on class during which you will learn how to make and bake the following breads: Oatmeal Bread (this bread is made from a combination of flour and oatmeal. The dough is rolled in oatmeal prior to baking and the flavour is fantastic) ; Holzfaller - German Multigrain Bread (this flavoursome bread is very popular in Germany and is made from a combination of wheat and rye flour with lots of seeds and grains): Traditional Irish Wheaten Bread (many people have their own recipe and method for "brown soda bread" but we will show you how to make it using the traditional method but using modern technology).

Module B: This module is a 4 hour hands-on class during which students will learn to make and bake a range of different products including the following: Coburg - using a Buttermilk Sour Dough (Coburg is a town in Germany. This bread has a mild sour flavour); Gourmet Baguette (simple to make, flavoursome and attractive. One of the most popular breads made at the academy); Spelt Bread (Spelt wheat fell out of favour with modern flour millers because it is difficult to mill. It is an ancient wheat and the flour makes a really flavoursome bread)

Students are welcome to take either module A or B, in any order. or perhaps consider taking both modules.
