FOUNDATION SUGAR CRAFT CERTIFICATE COURSE

This is an intensive 4 day foundation level course during which you will learn the basic elements of cake decorating. This certificate course is suitable for a complete beginner and also for those who want to improve their skills in modelling, piping and flower work.

Firstly the participants will make and bake a Madeira Cake using the Baking Academy of Ireland premium quality; tried and trusted recipe. They will then learn how to make buttercream, cut, fill and assemble the cake. The participant will also learn how to coat the cake with sugar paste. We will teach you our secrets and give you useful tips on how to decorate the perfect novelty cake each time.  We will show you the techniques and tips that will greatly improve your skills and give you the confidence to create your own sugar craft master pieces. The skills you will learn on this course include:

• You will learn about the different types of pastes, for example modelling and flower paste. How they are made and what they can be used for.
• How to colour and coat a chocolate biscuit cake with sugar paste.
• Learn how to model a novelty footballer
• Learning about royal icing and the correct consistency for piping
• You will make and bake your own lemon Madeira cake
• Making butter cream, colouring and marbling it.
• Cutting, filling and assembling your madeira cake
• Applying a crumb coat with butter cream
• Decorating the cake with butter cream and ganache.
• Wired and unwired flowers such as roses and blossoms.
• Foliage and the assembling of the floral spray.

Demonstrations will be given on the making of royal icing, a piping bag, white chocolate ganache, meringues, macaroons, colouring chocolate and the making of flower paste. At the end of the course there will be a question and answer session.

On completion of this four day course you will have the confidence to decorate cakes to a professional finish, make flowers, pipe and use modelling paste. Each student who completes the course will be presented with a Baking Academy of Ireland Certificate and will take their beautiful cakes home.
