Derek O'Brien

Former head of the National Bakery School of DIT, and founder of The Baking Academy of Ireland, Master Baker Derek O'Brien has honed and perfected his craft across his decades of work. During his time with DIT, he introduced and managed their hugely popular part-time Professional Baking courses. He is the manager of the hugely successful Irish National Baking Team, and has recently been appointed Head of the English Language Diploma in German Baking Programme by the International Baking Academy in Germany.

Aoife O'Leary

Graduating from the National Bakery School, DIT, with an hon. Degree in Baking & Pastry Arts, Aoife has also represented Ireland as a member of the Irish National Baking Team. Aoife specializes in all things sweet; macaroons, donuts, cupcakes, and more.

Caroline Lambe

Caroline is a sugar craft master who has won gold with her creations. She graduated from the DIT with an hon. Degree in Culinary Arts and is a dedicated teacher who excels in her field. Caroline both designs and teaches our sugar craft courses and is highly popular with our students.

Jimmy Griffin

The owner of Griffin's Bakery in Galway, Jimmy first achieved his degree in Baking Technology and Management at the National Bakery School, DIT. He has since garnered considerable experience in the baking industry, and teaches viennoiserie as a visiting lecturer.

Gunter Franz

Gunter is a German Meisterbäcker with considerable baking experience. He spent many years teaching at the German Bakers Academy in Weinheim and is now involved in product development. Gunter is a visiting lecturer and teaches German bakery products. 

Mary Jensen

Having graduated from the National Bakery School, DIT, with a degree in Baking Technology and Management. Mary was recently awarded an Hons degree in Food Science & Technology by Institute of Technology, Tallaght, Dublin. She is presently studying for an MSc in Food Business Management & Technology. She has also amassed considerable experience as a teacher in the field of baking.

Orlaith Murphy

Acquiring a degree in Baking Technology and Management from the National Bakery School, DIT, Orlaith further honed her skills in Australia for many years as a baker/pastry chef.

Our aim is to provide the best educational experience for each and every student. We will demystify the science and technology and inspire you to create something fantastic.
